Vitamin C is a crucial nutrient with multiple uses in our body. Zespri has created their very own variety of creative recipe ideas to incorporate an optimal intake of Vitamin C in diets.

Choc O’ Gold Muffins

Zespri Kiwifruit Choc Gold Muffins

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Ingredients

  • 2 large Zespri® Gold Kiwifruit
  • ½ cup chocolate chips
  • ½ cup sugar
  • 2 cups (250 g) self raising flour
  • 75 g (3 oz) butter or margarine
  • 1 egg, lightly beaten
  • 1/2 cup (125 ml) milk

Directions

  1. Preheat the oven to 190°C (375°F)
  2. Lightly grease 10 muffin cups
  3. Place the chocolate chips, sugar and sifted four into a bowl
  4. Melt the butter or margarine and combine with the egg and milk
  5. Peel the Zespri® Gold Kiwifruit
  6. Cut in 1 cm (1/2 in.) dice. Reserve a little fruit for the top of the muffins
  7. Add the liquid ingredients and diced fruit to the dry ingredients and combine quickly, until just moistened
  8. Spoon into the muffin cups and dot with the reserved fruit
  9. Bake for about 20 minutes

Kiwifruit Almond Tart

Kiwifruit Almond Tart

Serves: 6 – 8

Ingredients

  • 3 Zespri® Green Kiwifruit
  • 1 cup whole blanched almonds
  • Pie crust mix for 23 cm (9½ in) tart
  • 1/2 cup sugar
  • 125 g (4 oz) butter, softened
  • 2 eggs
  • ⅓ teaspoon almond essence (extract)
  • 2 tablespoons flour
  • 1/3 cup apple jelly, melted lightly
  • Sweetened whipped cream (optional)

Directions

  1. Spread the almonds in a single layer on cookie sheet. Toast at 190°C (375°F), 8 – 10 minutes, until lightly browned. Cool
  2. Prepare the pie crust dough according to package direction. Roll out and place it into the tart pan. Set aside
  3. In a food processor, with metal blade in place, grind the almonds with the sugar. Mix in the butter, eggs and almond essence, until thoroughly combined. Blend in the flour
  4. Spoon the mixture into the prepared tart shell, smoothing out the top. Bake at 190°C (375°F) for 35 – 40 minutes, until golden brown. Cool
  5. Peel and slice the Zespri® Green Kiwifruit 5 mm (¼ in) thick. Arrange the Zespri® Green Kiwifruit in an overlapping, spiral pattern over top of the almond mixture. Brush with melted apple jelly. Serve with lightly sweetened whipping cream if desired

Double Kiwifruit Salsa

Ingredients

  • 4 Zespri® Gold Kiwifruit
  • 4 Zespri® Green Kiwifruit
  • 1 cup finely chopped red onion
  • 2 tablespoons chopped fresh coriander (cilantro)
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon fresh lime juice
  • 1 teaspoon ground cumin

Directions

  1. Peel Zespri® Kiwifruit, cut in 1 cm (1/2 inch) dice
  2. Place all ingredients into a medium mixing bowl and carefully mix, until well blended
  3. Refrigerate for at least 1 hour to allow flavours to blend
  4. Serve with corn tortilla chips or as an accompaniment to grilled pork, lamb, fish or chicken
