Recipe For Chicken And Corn Patties
Yield: 24 patties
Ingredients:
200g chicken breast – minced
1/3 large fresh corn-on-the-cob (note 1)
3 pieces of water chestnuts – finely diced
10 strings of fine French beans – finely diced
1 small red onion (about 60g) – minced
½ cup normal breadcrumb/ panko crumb (Japanese breadcrumb)
2 ½ tbsp cornflour
1 large egg (lightly beaten)
2 tsp cooking oil
Seasoning:
- 1 tsp salt
- ¾ tsp sugar
- ¼ tsp paprika (optional)
- Dash of pepper
Methods:
- Put chicken breast, sweet corns, water chestnuts, fine French beans and red onion into a mixing bowl and combine well. Add in breadcrumb and cornflour to the mixture.
- Add in egg, seasoning and oil. Stir in one direction until the batter is well distributed.
- Heat a little oil in a non-stick pan. Drop 1 tablespoonful of batter into the pan and flatten slightly with a spatula or fork. Lower heat and cook for 2-3 minutes on each side or until golden brown. Cook the patties in batches. (note 2)
- Transfer patties to a serving plate lined with kitchen paper. Best to serve warm with dipping sauce.
Notes:
- Remove the outer leaves and thin hairs (silk), wash and rinse and then carefully run a knife down the cob to cut out the corns.
- Keep the patties manageable at a heaped tablespoon. Too large a patty will take longer to cook and the patty may break up. Use a spoon to scoop the batter and a fork to scrape the batter into the pan.
- There is no need to pre-cook the fresh corns.

Ask The Expert Esther Lim: How Do I Know My Child Is Learning When I Read To Her?
In this Ask The Expert section, we asked Esther Lim, CEO and Founder of LEAP SchoolHouse, about language and literacy development in children. Born and educated in Singapore, she holds a Master Degree in Education (NTU/NIE), Bachelor Degree in Arts (NTU), Diploma in Marketing – Top student for the year 2000 (Chartered Institute of Marketing).
Esther has more than 10 years of teaching experience and has taught widely in both Secondary and Primary schools. She was also involved in curriculum planning and development work for the primary unit at MOE for several years. Esther has also conducted workshops and talks for educators, locally and overseas. Besides all the above credentials, Esther is also a mother of three children.

Question: Though I read to my girl almost every night, how do I know if she is learning? She seems to be not interested sometimes.
Answer: Young children are multi-sensorial to their environment. Whilst your little one might seem to be disinterested and looking away from the book, she could be sensitive to the reading process in the auditory or even tactile way. Continue to read and interest her in the content through pointing out to her, familiar things she can relate to in the book. Keep the reading process short and add in varied tone to ‘hook’ her to what you are trying to share with her. The magic moment comes when she is able to point out to you pictorial cues or relate what has been shared with her in the book(s) to her surroundings.
